The product is characterised by an intense red colour of the lean meat and a white colour of the fat, by the “garnet” shape due to the net, by medium notes of seasoned meat, pepper and nutmeg. The taste is medium sweet, slightly salty and with a sour note, and with medium aromatic persistence.
