

IL PANE DI OSTIA
The business began 30 years ago from the experience of its owner, Cristiano Merlini, a member of a large and prominent family of bakers who have been teaching and nurturing the industry for generations with master bakers. The bakery's mission is to produce and distribute bread and pastries, using only the finest raw materials, ensuring excellent value for money while offering artisanal products. The bakery produces over 30 types of bread, as experience and the need to experiment with new uses for flours, including those from native grains, has led to the creation of new types of bread, alongside the classic ones.
Special breads are produced at the Via Diego Simonetti bakery.

The bread is characterised by the shape of a crossed ciabatta, a dark brown colour with a dusting of flour on the surface and good alveolation of the crumb. The high olfactory intensity is characterised by pronounced notes of wheat and roasted combined with yeast scents. The taste is medium salty, slightly sweet, and with a slight bitter note. The crust is crunchy and the crumb soft, with a high aromatic persistence.
